Autumn has finally begun! Fall time is my favorite time for baking, cooking and trying new recipes. It must be the cool crisp air that makes comfort food seem more well….comforting. Today I wanted to share a delicious and simple chicken and wild rice soup recipe by using Tastefully Simple’s Creamy Wild Rice Soup Mix. This recipe requires simple ingredients and makes putting a hearty dinner meal together a breeze.

I added 2 cups of chopped up delicious roast chicken that I had made a few days earlier to this soup mix and it made this soup less like an appetizer and more like a meal. Pair this soup with salad and bread and dinner is done. With baby #3 due in early December, I love finding and creating recipes that don’t take much time. From start to finish you can have this meal on your table in less than one hour and most of that time is just waiting for the rice to get tender.
I think this would be a great leftover meal during Thanksgiving. Simply swap out the roasted chicken for leftover turkey. You could even add some leftover corn or carrots and sneak in some veggies.
