We sure love easy cake mix cookies in this household. Now, i’m certainly not saying they are better than a good ole’ homemade cookie with all the fixings like our raspberry coconut cookies, Welsh Cookies, or our Chocolate Chip Cut Out Cookies. but if you have tried our funfetti cake mix cookies or our double chocolate cake mix cookies than you know they are a delicious and fast cookie recipe the kids sure love! You only need 3 ingredients to make these strawberry cake mix cookies and you probably already have what you need in your pantry.
These strawberry cake mix cookies have such a soft texture to them which makes it hard to stop at just eating one or two. This recipe makes about 18-20 cookies depending on how big you scoop out the batter. We love to add sprinkles to our batter to make them a Funfetti version but you can certainly leave the sprinkles out and they will be just as delicious!
How to make Strawberry Cake Mix Cookies
- Mix together cake mix, canola oil and eggs.
- Add sprinkles if desired. Mix until batter is moist and ingredients are blended.
- Shape dough into 1 inch balls or use a 1 inch cookie scoop.
- Top with extra sprinkles if desired.
- Bake at 375 degrees for 8-10 minutes or just until centers are set.
How to store cake mix cookies?
We typically store our uneaten cookies in a Ziploc storage bag or airtight container. They will last 2-3 days on the kitchen counter. We also like to freeze our cookies. We place 1-2 cookies in sandwich bags and freeze them. They are great for the kids lunches when you want to send a little treat. Just pull out the sandwich bag in the morning and place it in their lunchbox. By the time lunch time comes around the cookies are thawed. 🙂

- Mix together cake mix, oil, and eggs. Mix until fully combined.
- Add sprinkles if desired.

- Add more sprinkles on top, if desired.
- Bake at 375 degrees for 8-10 minutes or until centers are just about set.

Hi Tiffany! Yes, you can swap vegetable oil for canola oil. You can most likely also use coconut oil, but I haven’t personally tested it.
