Birds Nest Funfetti Cookies

These cookies are such a fun and simple Easter treat.  We love to play around with different treat ideas and these birds nest funfetti cookies were a spin from our easter egg coconut cupcakes and our popular funfetti cake mix cookies.  They are a quick cake mix cookie recipe that’s rolled in pretty pastel sprinkles and topped with three mini Cadbury Easter eggs.  

Ingredients needed for Birds Nest Funfetti Cookies

You only need a few simple ingredients to make these yummy cookies.  If you don’t like Funfetti you can always swap out the cake mix for another flavor of your choice. 

• Funfetti cake mix
• sprinkles
• oil
• eggs
• Cadbury Mini Eggs

How to make Birds Nest Funfetti Cookies

1. Mix together cake mix, canola oil and eggs.
2. Add additional sprinkles if desired. Mix until batter is moist and ingredients are blended.
3. Shape dough into 1 inch balls or use a 1 inch cookie scoop. Roll dough into extra sprinkles or top with extra sprinkles if desired.
4. Bake at 375 degrees for 6-8 minutes.
5. Remove from the oven and immediately push Cadbury eggs in to the cookie. Allow to cool before serving.
