Easy Pumpkin Cheesecake Recipe
September 1st comes along and all things pumpkin begin to appear right? I love pumpkin all year round but I definitely, like so many others, bake with it more often in the Fall. There is just something about pumpkin cinnamon rolls, mini pumpkin donuts, pumpkin swirl pancakes and this pumpkin cheesecake recipe that just fits the mood that Fall brings with it. The cozy cooler nights, the crisp air, spice scented candles and warm comfort food are just a few of my favorite things during this time of year. This pumpkin cheesecake recipe is a delicious comfort food dessert and it’s perfect for any Fall themed parties or to be served along apple pie or my favorite triple berry pie at your Thanksgiving table.

Cheesecake with Pumpkin
The two layers in this pumpkin dessert look impressive but are surprisingly simple to make. All you need to do is mix each layer in separate bowls, then pour them one at a time into the crust. We love using a homemade graham cracker crust for extra flavor, but a store-bought version works just as well if you’re short on time. You can even switch things up with a chocolate crust or even a gingersnap crust! Either way, it’s going to be delicious!
One your layers are poured you will pop it in the oven for about 40 minutes or until the center is just about set. Then you will let it rest and cool in the refrigerator for at least 3 hours.

Ingredients Needed to Make a Pumpkin Cheesecake
- Cream Cheese
- Pumpkin Puree
- Vanilla
- Sugar
- Spices– nutmeg, ground cloves & cinnamon
- Eggs
- Graham Cracker Crust – homemade or store-bought

How To Make a Pumpkin Cheesecake
Step 1: Preparing the Graham Cracker Crust
- Preheat oven to 325 degrees.
- Place graham crackers in a food processor and process until small crumbs have formed.
- Stir in butter and sugar.
- Press into a 9-inch pie plate. Bake for 10 minutes. Allow to cool slightly.


Step 2: Prepare the Cheesecake Layer
- Mix cream cheese, sugar and vanilla with an electric mixer until well blended.
- Add eggs one at a time until well blended.


Step 3: Prepare Pumpkin Layer.
- Remove 1 cup of cheesecake mixture and place into a separate bowl.
- To the reserved cheesecake mixture add pumpkin and spices.


Step 4: Layered Pumpkin Cheesecake
- Pour cheesecake mixture into the bottom of your prepared crust.
- Top cheesecake layer with your pumpkin cheesecake filling.


Step 5: Bake and Cool
- Bake at 350 for 35 to 40 minutes or until center is just about set.
- Cool and refrigerate for 3 hours or overnight.
- Top with whipped cream and serve!

- Pour remaining cream cheese batter into crust.

- Top with whipped cream and serve.
