These Strawberry Lemonade Bars are a delicious bite of summer! Tangy lemonade and sweet strawberries make this a dessert you will be begging for seconds!
One of my absolute favorite flavors to bake with is lemon. My lemon coconut poppy seed waffles are one of my families favorite breakfast waffles! Lemon adds such a fun tangy-ness to a recipe and fills the air with such a fresh scent. One of my favorite desserts is the classic lemon bar but we decided to make this delicious strawberry lemonade bars with some extra strawberries we had. These strawberry lemonade bars are the perfect balance of sweet and tart–just the way I like it! We tend to like our bars on the tart side so if you would prefer your bars sweeter just add a tad more sugar!
Of course no variety of lemon bars are complete without a sprinkle of confectioners sugar. There is something about biting into that sweet layer before you taste the tartness.
Strawberry Lemonade Bars
Ingredients
FOR THE CRUST
- 1/4 cup sugar
- 1/2 cup butter room temperature
- 1 1/2 cup flour
- 1/4 tsp salt
FOR THE FILLING
- 1/2 cup Lemon Juice
- Zest of one Lemon
- 8-10 Strawberries
- 1 1/2 cup sugar
- 3 eggs
- 1/4 cup flour, plus 1 TBSP
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
For the Crust
- Beat together sugar and butter until light and creamy.
- Gradually beat in flour and salt until the mixture is crumbly.
- Press mixture into a 9 in. x 13 in. pan and bake at 350 degrees for 17 minutes.
For the Filling
- Place all filling ingredients in a blender and blend until smooth.
- Pour into the hot crust when it's finished baking.
- Bake for an additional 25 minutes or until the middle is set.
- Sprinkle with confectioners sugar.
- Serve warm or chill in refrigerator until later use.
Notes
These are one of our favorite recipes and it really just seems to “scream” summer to me. During the summer months strawberries and lemons are in season which makes this the perfect dessert! It’s pretty enough to serve at a brunch with your closest girlfriends or just celebrating a day well done 🙂

I did not see where in the recipe it calls for lemonade drink mix. I used real lemon juice. They were very good.
Can they be frozen?

I just made these bars today and oh my goodness they are a game changer. Perfect combination of sweet and tart. I’ve had a hard time finding recipes where you get the lemon flavor AND the strawberry flavor and these were just perfection! The crust is light but holds together. I very rarely review recipes but I felt I just had to. YUM.

I used a 9×13 pan. Had to really work the pastry dough into the pan to get it even, but it crisped up nicely in 15/16 minutes. The filling concerned me (mainly due to other comments, plus the consistency was a bit soupy). So I added 2 tbsp of sugar and 1/4 tsp cornstarch. I don’t know if it helped or if it would’ve been fine the way it was, but it set wonderfully in 25 min at 350 degrees farenheit (I had it on the center rack).
It came out amazing. Might be our new favorite summer dessert!

Not sure what happened but left them in for 25, then 30, the. 45, then 50 minutes. The filling never set.

I’m not sure what went wrong, sorry you had troubles! I actually JUST made them again this weekend…to film a video for them… and they turned out just fine. Even when they are finished baking and cool completely ( I like to put them in the fridge) they are a bit ooey gooey but should definitely set up enough that you can cut them into bars. Did you make sure you baked them in a 9 x 13 inch pan. It definitely needs to be a larger pan so the filling actually sets and bakes properly.

I’m thinking of making these this week with a bunch of left over strawberries that I have, I have everything but the lemonade drink mix. I know it says optional, but do you use it as a gelatin binder for the bars? And or have you made it with out the drink mix too if so how did it turn out?

You can definitely leave the lemonade drink mix out…..I just liked the extra pop of flavor it adds 🙂

Just curious as to how the consistency of these bars is suppose to turn out? Mine came out very gooey in the middle after baking for extra time. It then collapsed completely after removing it from the over.

Hi Aly! So the insides will be a little gooey but they shouldn’t have have completely collapsed on you. Did you bake it in a 9 x 13 inch pan?
