I love when you can take a classic recipe like a family-favorite sandwich and transform it into another delicious and simple recipe such as a hot dip to serve as an appetizer. This dip has all the flavors of the classic sandwich – cheese, corned beef, sauerkraut, and thousand island dressing.
Tips for making Hot Reuben Dip
- Corned Beef- while you can certainly use any leftover corned beef for this recipe I prefer to just grab some from the deli counter. I like to cut the corned beef into small bite sized pieces. You can also use shredded corned beef is desired.
- Sauerkraut– I prefer to use the sauerkraut in the can. Before adding the sauerkraut to the dip you must make sure you strain all the liquid from the sauerkraut. I like to place it in a strainer and push until all the liquid has been removed.
- Bake Till Bubbly-while I prefer to bake my dip to get that nice golden cheesy topping you can also mix all you ingredients in a slow cooker and cook on low for 4 to 6 hours.
How to make Dip
- Preheat oven to 400° F.
- In a large bowl, stir all ingredients together with a wooden spoon.
- Transfer mixture to a serving dish that can be placed in the oven. Bake for about 20 to 30 minutes, or until dip is bubbling and nicely browned.
- Serve with crackers and toasted baguettes.

- 1 lb corned beef, diced ( from the Deli)
- 8 ounces swiss cheese, shredded
- 1 - 14 ounce can sauerkraut, drained very well
- 3/4 - 1 cup mayonnaise
- 1/4 cup thousand island dressing
Instructions
- Preheat oven to 400 degrees.
- In a large bowl, stir all ingredients together with a wooden spoon.
- Transfer mixture to a serving dish that can be placed in the oven.
- Bake for about 20 to 30 minutes, or until dip is bubbling and nicely browned.
