I love when you can take a classic recipe like a family-favorite sandwich and transform it into another delicious and simple recipe such as a hot dip to serve as an appetizer.  This dip has all the flavors of the classic sandwich – cheese, corned beef, sauerkraut, and thousand island dressing.

Tips for making Hot Reuben Dip

  1. Corned Beef- while you can certainly use any leftover corned beef for this recipe I prefer to just grab some from the deli counter.  I like to cut the corned beef into small bite sized pieces.  You can also use shredded corned beef is desired.
  2. Sauerkraut– I prefer to use the sauerkraut in the can.  Before adding the sauerkraut to the dip you must make sure you strain all the liquid from the sauerkraut. I like to place it in a strainer and push until all the liquid has been removed. 
  3. Bake Till Bubbly-while I prefer to bake my dip to get that nice golden cheesy topping you can also mix all you ingredients in a slow cooker and cook on low for 4 to 6 hours. 

How to make Dip

  1. Preheat oven to 400° F.
  2. In a large bowl, stir all ingredients together with a wooden spoon.
  3. Transfer mixture to a serving dish that can be placed in the oven. Bake for about 20 to 30 minutes, or until dip is bubbling and nicely browned.
  4. Serve with crackers and toasted baguettes.

Ingredients

  • 1 lb corned beef, diced ( from the Deli)
  • 8 ounces swiss cheese, shredded
  • 1 - 14 ounce can sauerkraut, drained very well
  • 3/4 - 1 cup mayonnaise
  • 1/4 cup thousand island dressing

Instructions

  • Preheat oven to 400 degrees.
  • In a large bowl, stir all ingredients together with a wooden spoon.
  • Transfer mixture to a serving dish that can be placed in the oven.
  • Bake for about 20 to 30 minutes, or until dip is bubbling and nicely browned.

    This dip is all the best things about the classic sandwich in dip form! I like to serve it with little rye toasts, so good!

    Oh my gosh this is seriously amazing. Se served it up with little rye crackers and seriously thought I was eating a big old reuben sandwich every time. So good!
