My favorite thing about cake mix cookies are the many different flavors you can make with one box of cake mix. Some of our favorites are our funfetti cake mix cookies, double chocolate, lemon, and red velvet cookies. These strawberry crinkle cookies are delicious and get eaten quickly – they are our one of our top favorite cookies and are much enjoyed with their sweet insides and lightly dusted tops with powdered sugar.
Tips for Making Cake Mix Cookies
Can I freeze cake mix cookies?
Yes! Growing up my mom would make cake mix cookies and package one in a ziploc baggie, which was a fun and yummy lunch time dessert. By the time it was time to eat lunch at school our cookie had thawed. 🙂 Be sure to let your cookies cool completely on the counter before you place them in the freezer.
My cookie dough is sticky, what can I do?
Depending on the cake mix brand you use some batters can be a tad stickier than others. If you cookie dough is too sticky to roll with your hands I like to use a fork to place it in the powdered sugar. Once it has a small amount of powdered sugar on them it’s typically much easier to roll them in your hands. You can also refrigerate your cookie dough for 30 minutes which helps make them less sticky as well.
How can I tell my cookie is done baking?
You definitely don’t want to over bake your cookies as just slightly under baking them is what gives them their soft insides. I typically bake mine for about 9-10 minutes but every oven varies. Typically once they start cracking they are ready to come out of the oven. They will continue to bake while they cool on the baking sheet. If you want your cookies to be slightly flatter you can lightly press a glass on top as soon as the cookies come out of the oven.
How to make Strawberry Crinkle Cookies
- Mix together cake mix, canola oil and eggs.
- Mix until batter is moist and ingredients are blended.
- Shape dough into 1 inch balls or use a 1 inch cookie scoop.
- Roll in powdered sugar.
- Bake at 375 degrees for 8-10 minutes or just until centers are set.

- 1/3 cup canola oil
- 2 eggs
Instructions
- Mix together canola oil, eggs, and cake mix.
- Mix until well blended.
