FUNFETTI BLONDIES

We love funfetti desserts!  Whether we are making our simple funfetti cake mix cookies or adding some color to some mini donuts we love adding a touch of colorful sprinkles for some fun! These blondie bars has a sweet cookie type base and filled with sprinkles and white chocolate chips. It’s definitely a sweet treat and pairs perfectly with a refreshing cup of cold milk. 

Funfetti Blondie Bars from Scratch

While I do love a quick cake mix recipe and semi homemade desserts this recipe is so simple and the texture of these blondie bars are so much better when made from scratch. Just like any good cookie or blondie recipe this recipe is filled with some of the most common baking ingredients.

  • Butter
  • Sugar- both brown and white
  • Eggs
  • Vanilla
  • Flour
  • Baking Agents
  • White chocolate chips, optional
  • Rainbow Sprinkle, Jimmies

INSTRUCTIONS AND TIPS

  1. Preheat oven to 350°F.  Line a 9×13 baking pan with parchment paper, leaving some overhang for easy removal, and set aside.
  2. In a large mixing bowl, whisk together the melted butter, brown sugar, and sugar until well combined. Whisk in the eggs and vanilla extract until fully combined.
  3. Add the flour, baking powder, and salt and mix until just combined, then fold in the white chocolate chips and 3 Tbsp of sprinkles. .
  4. Scoop the batter into the prepared 9×13 pan and spread it around into one even layer and sprinkle remaining sprinkles on top. The batter is thick. Spray your clean hands with some cooking spray to easily push your batter flat.
  5. Bake at 350°F for 25-30 minutes or until the top is set and lightly browned. Remove from the oven and cool completely before cutting into bars.

BAKING TIP:  Paper is great for baking bars, blondies, and brownies!  Lightly spray your baking dish with cooking spray and then add your parchment paper. The cooking spray helps hold the parchment paper in place.  Once your bars are cooled lift your blondies with your parchment paper and cut.  Removing the bars from the pan before cutting allows you to get more uniform pieces and cleaner cuts 🙂  We aren’t always worried about clean cuts though so do what works for you! 🙂

  • 3/4 cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup white chocolate chips
  • 3 TBSP rainbow sprinkles, jimmies
