This pistachio pudding salad is perfect for an Easter brunch, Fourth of July picnic or really any get together. I love the flavor and texture the crushed pineapple brings to this dish. It’s a simple pudding salad that you can throw together in minutes and only needs to be in the refrigerator for 1-2 hours before it’s ready to serve.

- pistachio pudding mix
- crushed pineapple
- whipped topping
How to make Pistachio Pudding Salad
- Begin by adding your crushed pineapple, undrained, and pistachio pudding mix to a large bowl and mix until well blended.
- Fold in whipped topping until combined. Place in refrigerator for 1-2 hours or until ready to serve.
- Top with crushed pistachios before serving, if desired
Can I add mini marshmallows to Pistachio Pudding Salad?
We prefer this particular pudding salad without marshmallows but if you like the added sweetness mini marshmallows adds to the dish you can start by adding a cup and more if desired. If preparing this dish the night before I would add the marshmallows an hour or two before serving.

Ingredients
- 1 3 ounce packet of Pistachio Pudding Mix
- 1 20 ounce can of crushed pineapple
- 1 8 ounce container of whipped topping, thawed
- 1/4 cup chopped pistachios for garnish
- * you can also add a cup of mini marshmallows if preferred.
Instructions
- In a large mixing bowl combine the crushed pineapple and pistachio pudding mix until well blended. Fold in the whipped topping. ( You would also add the marshmallows at this point)
- Top with crushed pistachios
