This cheesecake recipe is a delicious and simple recipe and is a wonderful base for many different toppings, our favorite is our delicious strawberry sauce I share below.  Now, before we get started, cheesecake can be finicky.  Sometime it can crack in the center and sometimes it doesn’t.  I’m not here to tell you how to make a crack free cheesecake. I know that might seem a bit opposite of what you would expect but I promise…when you top this cheesecake with a spoonful of this sweet strawberry sauce your really won’t mind if your cheesecake has a small crack on the top of it or not. 🙂 I am a no fuss baker and that’s how I like to enjoy my desserts. 🙂 If you are interested in trying to nail that perfect craft free cheesecake you can take a look at this article I found with a few helpful tips.

What ingredients do I need to make Cheesecake?

  • Homemade Graham Cracker Crust ( you can also use store bought but we prefer the taste of homemade)
  • Cream Cheese
  • Eggs
  • Sour Cream
  • vanilla

How to make Cheesecake

  1. In a bowl, mix together sugar and eggs until creamy.
  2. In a second bowl, mix together cream cheese and sour cream until creamy. Add vanilla. 
  3. Combine both mixtures until incorporated.
  4. Add filling to a springform pan. 
  5. Bake at 350 degrees for 45 minutes. Let cheesecake cool on wire rack.

Servings 8 servings

Ingredients

Crust :

  • 1 1/2 cups graham cracker crumbs, I prefer to buy graham crackers & pulse them in a food processor
  • 2 tbsp sugar
  • 2 tbsp butter, melted
  • dash of cinnamon

Cheesecake Filling :

  • 3 8 ounce packages of cream cheese full fat
  • 3 eggs room temperature
  • 1 cup sugar
  • 1 pt. sour cream
  • 1 tsp vanilla

Strawberry Topping :

  • 1 lb. strawberries, rinsed, hulled and thickly sliced
  • 1/3 cup granulated sugar
  • 1 tbsp lemon juice from 1/2 lemon

Instructions

Crust :

  • Mix together crust ingredients until well combined and press into a well greased 9 inch springform cheesecake pan

Cheesecake :

  • Mix sugar and eggs until creamy.
  • Cream the cream cheese and sour cream. Mix until very smooth.
  • Add vanilla.
  • Combine both mixtures until fully incorporated.
  • Add filling to pan.
  • Bake at 350 degrees for 45 minutes. Watch carefully.
  • Top with fresh strawberry topping on individual slices.

Strawberry Topping :

  • In a medium saucepan, combine sliced strawberries, 1/3 cup sugar and 1 tbsp lemon juice.
  • Place over medium heat and bring to a boil, stirring occasionally. Strawberries will release juice without any mashing required.
  • Reduce heat and simmer 20-23 minutes or until sauce is thickened, stirring occasionally.
  • Remove from heat and cool to room temperature. Sauce will thicken slightly as it cools.
