Poppy Seed Chicken Casserole in Baking Dish

The buttery ritz crackers that are baked on top are my kids favorite part of this dish.  It adds just a tiny bit of crunch to the dish and a pop of flavor to the chicken. Chicken, poppy seeds, sour cream mixture in bowl

How to make this Easy Poppy Seed Chicken Casserole:

  • Begin by pre cooking you chicken.  I prefer to boil either chicken breast pieces of chicken tenderloins until they are no longer pink inside.  Let cool to be able to handle and cut into bite sized pieces.
  • You can use a can of cream of chicken soup, cream of celery, or a can of mushroom soup interchangeable in this recipe.  It will affect the flavor of the dish only slightly.
  • Once I mix my wet ingredients, I add my chicken to that same bowl and mix until fully covered.  The less dishes the better 🙂
  • You can make this dish ahead of time and freeze it for another day.  Wait to add the crushed Ritz crackers until just before baking.
