Easy Poppy Seed Chicken Casserole
One of my favorite quick fix meals for my family is this delicious and easy poppy seed chicken casserole recipe. It can be on your dining room table in under an hour, which is perfect for those busy nights that you need something delicious and fast! 🙂 This casserole pairs well with a side salad, broccoli, or even some buttered egg noodles.
The buttery ritz crackers that are baked on top are my kids favorite part of this dish. It adds just a tiny bit of crunch to the dish and a pop of flavor to the chicken.
How to make this Easy Poppy Seed Chicken Casserole:
- Begin by pre cooking you chicken. I prefer to boil either chicken breast pieces of chicken tenderloins until they are no longer pink inside. Let cool to be able to handle and cut into bite sized pieces.
- You can use a can of cream of chicken soup, cream of celery, or a can of mushroom soup interchangeable in this recipe. It will affect the flavor of the dish only slightly.
- Once I mix my wet ingredients, I add my chicken to that same bowl and mix until fully covered. The less dishes the better 🙂
- You can make this dish ahead of time and freeze it for another day. Wait to add the crushed Ritz crackers until just before baking.
Easy Poppy Seed Chicken Casserole
Ingredients
- 2 lbs boneless skinless chicken breasts, boiled and cut into bite sized pieces
- 10 ounce can cream of chicken soup or substitute for a homemade version
- 1 cup sour cream
- 1/2 cup milk
- 1/2 cup butter,melted
- 2 TBSP poppy seeds
- 1 sleeve Ritz Crackers, crushed
Instructions
- Combine all ingredients together except for the ritz crackers.
- Spread in a 13x9 baking dish.
- Sprinkle with cracker crumbs, Bake at 350 for 30 minutes.
