Casseroles are one of the easiest dishes to prepare. Whether it’s for your family, picnic, or everyday gatherings casseroles are a dish that’s fast and feeds a ton.  This chicken noodle casserole is filled with egg noodles, chicken, veggie, and a flavorful sauce that brings it all together.  This recipe is mixed in one bowl and baked in a baking pan, minimal mess means minimal dishes! 🙂 

Simple Ingredients

A mixture of fresh and pantry ingredients will bring this casserole dish together in just a few minutes.

  • egg noodles
  • cream of chicken soup
  • mayo
  • cooked chicken
  • cheddar cheese
  • carrots & peas
  • spices

Tips for Preparing Ahead and Freezing:

Preparing Ahead: You can prepare this dish up to 6 hours before baking.  Preparing too far in advance will cause the noodles to soak up too much of the cream sauce.  If you notice your dish needs more liquid add a splash of milk to the casserole dish and mix with a spoon before baking.  Allow the casserole dish to sit on the counter while the oven is preheating to start to come to room temperature.  This will help it bake a bit faster. 

Freezing for Later: You can assemble all the ingredients for your casserole and then freeze it unbaked. If you want to freeze a baked casserole, let it cool before wrapping it and freezing. When baking a frozen casserole, you can either thaw it in the refrigerator the night before or you can pop it in the oven and then turn your oven on. This way the preheating slowly warms your dish before it starts baking.  Additional bake time may be required so be sure to have a piece of tin foil ready if the top is beginning to brown too quickly.  Give your casserole a quick stir halfway through baking if needed. 

How to make Chicken Noodle Casserole

  1. Preheat oven to 350F degrees.
  2. Spray a 9 x 13 baking dish with non-stick cooking spray.
  3. In a large bowl, combine chicken, cream of chicken soup, mayonnaise, milk, diced onion, shredded cheese and frozen peas and carrots. Stir until combined.
  4. Gently stir in cooked egg noodles. Pour in baking dish.
  5. Bake uncovered for about 30-35 minutes until bubbly and top is golden brown. Garnish with fresh parsley.

Ingredients

  • 12 ounces egg noodles, cooked & drained
  • 2 cans cream of chicken soup
  • 1/2 cup mayo
  • 1 cup milk
  • 3 cups cooked chicken, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup onion finely chopped
  • 1 cup frozen peas & carrots
  • 1/2 tsp garlic powder
  • salt & pepper, to taste
  • 2 Tbsp parsley

Instructions

  • Preheat oven to 350F degrees. Spray 9 x 13 baking dish with non-stick cooking spray.

    Very good! I only had peas so cut fresh carrots, and boiled until less than tender. Added diced red pepper – after removing carrots to a strainer, I put them in the hot carrot water for a few minutes. Took the advice of using one can of cream of mushroom and one can of cream of chicken soup. Also from another review, added more cheese on top and herbed breadcrumbs – hubby likes lots of cheese! Will be freezing two dishes since it made so much, plus have enough for lunch tomorrow! Enjoy!!!!

  2. I MADE THIS AND MY HUSBAND LOVED IT. I did not have 2 cans of cream of chicken soup so used one can cream of mushroom soup and added a can of mushrooms also. It turned out wonderful after adding cracker crumbs with additional cheese under crumbs. He wants it again for lunch today. Great recipe!!

    I liked it. Easy to make & a nice flavor. A little too much for just my husband & myself without having a lot of leftovers. Anyone know if it freezes well? Only thing I might change is add more chicken only because my hubby like his meats & really want a big chunk in every bite. I ll do this again & thing this will work well for potlucks!
