We have a pasta dishes for dinner at least a few time each week whether it’s our herbed chicken fettuccine, tomato basil shrimp pasta or this delicious chicken & broccoli stuffed shells recipe. Pasta dishes, at least for my family, seem to be the favorites and anytime I don’t need to argue with the kids and their food it’s a win for me! 🙂 This chicken and broccoli stuffed shells recipe does have a just a few more steps than most of my recipes but it’s well worth it!  The best part is you can prepare this meal ahead of time and bake a day or two later if needed.

My mom makes a delicious chicken and broccoli lasagna but I wanted to make something that is a bit faster and feeds my smaller family a bit easier.  Right now with my kids being younger and a bit picky a full size lasagna typically makes just a bit to much.  I love making these chicken & broccoli stuffed shells earlier in the week and then baking them when needed. Just be sure to cover your pan with saran wrap tightly so the cooked shells don’t dry out.   This is such a delicious recipe and the cheesy inside filling is just right.  Serve this dish with a side salad and some french bread for a filling meal your family will love!

Chicken & Broccoli Stuffed Shells

Ingredients

  • 15 large shells cooked
  • 1 lb chicken breast cooked and cut into bite sized piece
  • 1/4 cup butter
  • 1/4 cup minced onion
  • 1/4 cup flour
  • 1 tsp garlic salt
  • 2 tsp chicken flavored bouillon
  • 1/8 tsp. thyme
  • 1/4 tsp pepper
  • 2 1/2 cups milk
  • 1 1/2 cups cottage cheese, small curd
  • 4 cups broccoli florets cut into small bite sized pieces
  • 2 1/2 cups shredded cheddar cheese

Instructions

  • Cook pasta shells according to package directions, al dente.
  • Melt butter, add onion and cook until tender. Stir in flour, bouillon, garlic salt, thyme and pepper.
  • Cook until mixture thickens, stirring constantly. Whisk in milk and stir until hot. Stir in cottage cheese, broccoli, cooked chicken and cheese. Allow to cool slightly, will thicken.
  • Fill large shells and top with more cheddar cheese. Bake at 350 degrees for about 20-25 minutes or until bubbly.
