- 6 sweet potatoes, peeled and chopped
- kosher salt
- 3/4 cup half and half ( or milk )
- 4 tbsp butter
- 2 tbsp maple syrup
- freshly ground black pepper
- fresh thyme leaves for serving ( optional )
