Molasses cookies – the softest molasses cookies around! They are perfect for cookie exchanges and when you just need a sweet bite!

Molasses cookies are one of my all time favorite cookies and they are full of all the fall and holiday spices! Every year when the weather begins to get cooler my family asks for these classic molasses cookies.  This recipe is a highly requested one at our Christmas cookie exchange too!  

Ginger, molasses, and cinnamon are the key ingredients to these molasses cookies.   These sweet bites are super soft, but not fall apart soft, and they require no chilling which is perfect for my on-the-go lifestyle 🙂    

Before these cookies are baked they are rolled in some white sugar which gives the cookies and extra crunch when you bite into them.  I like to bake them right at the 8 minute mark so that the insides are just a hair under done as they continue to bake while cooling on the baking sheet.  When they come out of the oven they will flatten a bit and the soft insides will peak through the cracks. It really is a beautiful cookie 🙂  My family and I can easily go through one batch of these in a day 🙂 They just melt in your mouth especially right out of the oven with a glass of milk!

Best Soft Molasses Cookies

Ingredients

  • 3/4 cup shortening
  • 1/4 cup molasses
  • 1 egg
  • 1 cup sugar
  • 2 cups flour
  • 2 tsp baking soda
  • 1/4 tsp ground cloves
  • 1/2 tsp ginger
  • 1 tsp cinnamon
  • 1/2 tsp salt

Instructions

  • Mix together shortening, molasses, sugar and egg. 
  • In a separate bowl mix together flour, baking soda, ground cloves, ginger, cinnamon and salt.
  • Mix both mixtures together.
  • Roll into balls, roll in sugar
  • Bake at 375 degrees on ungreased cookie sheet for 8-10 minutes.
