We love a good sweet treat in this household and these cherry bread rolls can just hit the spot!  The rolls take a little bit of extra time as you need to use mashed potatoes.  This is a great dessert to make after a dinner with mashed potato leftovers, but you can certainly boil and mash some potatoes to use.  The potatoes helps to keep the bread rolls soft and I promise, you don’t taste them at all!

You can top your cherry bread rolls with any flavor of canned pie filling that you like, we just prefer cherry.  It would also taste delicious with blueberry, lemon, apple, and even raspberry pie filling.    One they are baked to a soft perfection you can drizzle a sweet confectioners sugar glaze on top.  It’s a treat that won’t last long in your house!  If you don’t like pie filling you can always leave the fruit off and just brush with melted butter and sprinkle on some cinnamon and sugar.

How to make Sweet Cherry Bread Rolls:

  1. In a mixing bowl, dissolve yeast in warm milk.  Add the mashed potatoes, water, sugar, butter, salt, egg and 1-1/2 cups flour; beat until smooth.
  2. Stir in enough remaining flour to form a soft dough. Do not knead. Cover and let rise in a warm place until doubled, about 1 hour.
  3. Punch dough down. Turn onto a lightly floured surface; divide into 24 pieces.
  4. Gently roll each into a 12-in. rope. Holding one end of rope. Loosely wrap dough, forming a coil. Tuck end under; pinch to seal. Place 2 in. apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes.
  5. With thumb, make a 1-in. indentation in center of each coil. Fill with cherry pie filling
  6. Bake at 400° for 12-15 minutes or until golden brown. Remove from pans to wire racks to cool. Drizzle with Vanilla Glaze. Yield: 2 dozen.

Ingredients

  • 1 cup prepared mashed potatoes
  • 1 cup water
  • 1 pkg active dry yeast
  • 1 cup warm milk
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 2 tsp salt
  • 1 egg
  • 5 1/4- 5 3/4 cups flour
  • 1 can cherry pie filling

GLAZE:

  • 1 1/2 cups confectioners sugar, sifted to remove large lumps
  • 3-4 TBSP milk
  • 2 tsp vanilla extract

Instructions
