Chocolate Peanut Butter Ritz Crackers

One of our favorite Christmas treats to enjoy during the holiday season are these chocolate covered peanut butter Ritz crackers.  This sweet and salty treat package up well to share with friends and are a great sweet bite to share at your holiday parties.  We like to cover our peanut butter filled crackers with a combination of white and milk chocolate but you can choose to use one or the other.  We also like to add some sprinkles for a festive touch but feel free to leave out the sprinkles and leave them plain or add an extra drizzle of chocolate on top for a different look. 

While we typically make this sweet treat around the holidays you can make these all year round and just swap out what kind of sprinkles you use.  It’s a quick treat to make for all occasions. 

Tips to make Chocolate Covered Ritz Crackers

  • Place the salty side of the cracker towards the inside.  While it doesn’t really matter which side you spread the peanut butter on I have noticed that having the salty side facing down makes it a bit easier for a smoother finish on the top. 
  • Pop in the refrigerator to help the chocolate set faster.  Once the chocolate has set it’s time to enjoy them!
  • While these Ritz crackers can be left on the counter for a few hours I find they taste best when stored in an airtight container in the refrigerator.

How to make Chocolate Covered Peanut Butter Ritz Crackers

  1. Line a baking sheet with parchment or wax paper. Place 24 crackers on the baking sheet. Top each cracker with about 1/2 tablespoon of peanut butter and top with a second cracker. I like to have the salty sides facing towards the inside.

  2. Place the chocolate or white chips in a glass bowl and place it in the microwave. Microwave for 90 seconds. Stir well. Microwave an additional 30 seconds, as needed. Stir to fully melt the chocolate

  3. Dip each peanut butter sandwich into the chocolate, using two forks to drain the excess chocolate off the cookies. Place the chocolate covered cookies back onto the lined baking sheet.

  4. Place the cookies in the refrigerator until set.  Transfer the chilled cookies to an airtight container and store in the refrigerator.

  • 16 ounces semi-sweet chocolate or white chocolate chips

    These were so quick and easy to make and so yummy! My kids helped and then we included them in our treat trays for neighbors.
