These Apple and Oatmeal Muffins are the perfect breakfast muffin. They have a touch of sweetness from the honey and apples and a hint of fall with the cinnamon spice.
It’s really no secret that we love our muffins in this family. With three kids under the age of 6 they are the perfect grab-and-go breakfast and snack to have on hand. I typically will make a double batch of muffins and pop the leftovers in the refrigerator. Pop the muffin in the kids lunch bag and by the time it’s lunch time it’s good to go! These apple and oatmeal breakfast muffins are the perfect hearty muffin to start off your day. They are perfect anytime of the day but pair them with some scrambled eggs in the morning and breakfast in no fuss!
These easy oat & apple muffins have a touch of sweetness with the honey and apple bites. I typically use unsweetened applesauce with these muffins but if you want them to be a tad bit sweeter you can use regular applesauce. My husband loves to drizzle these oat & apple muffins with honey. My kids like to dip them in a tiny bit of maple syrup 🙂
DIRECTIONS FOR APPLE AND OATMEAL BREAKFAST MUFFIN:
Oat & Apple Muffins
Ingredients
- 1 1/2 cup quick oats
- 1 cup flour
- 1/3 cup brown sugar
- 1/4 tsp cinnamon
- 3 tsp baking powder
- 1 tsp salt
- 2/3 cup milk
- 1/2 cup applesauce
- 1/3 cup coconut oil
- 1/4 cup honey
- 1 1/2 cup diced apples
Instructions
- In a bowl combine dry ingredients. In a separate bowl combine egg, milk, applesauce, oil, andhoney. Stir into dry ingredients just until moistened. Fold in diced apples.
- Fill greased paper-lined muffin cups with approximately ¼ cup of batter. Bake at 400 degressfor 15-18 minutes. Yield: 12-15 muffins
