Oat & Apple Muffins

Ingredients

  • 1 1/2 cup quick oats
  • 1 cup flour
  • 1/3 cup brown sugar
  • 1/4 tsp cinnamon
  • 3 tsp baking powder
  • 1 tsp salt
  • 2/3 cup milk
  • 1/2 cup applesauce
  • 1/3 cup coconut oil
  • 1/4 cup honey
  • 1 1/2 cup diced apples

Instructions

  • In a bowl combine dry ingredients. In a separate bowl combine egg, milk, applesauce, oil, and
    honey. Stir into dry ingredients just until moistened. Fold in diced apples.
  • Fill greased paper-lined muffin cups with approximately ΒΌ cup of batter. Bake at 400 degress
    for 15-18 minutes. Yield: 12-15 muffins
