I just love this sprinkle cookie recipe. It only takes a boxed cake mix and three additional ingredients you most likely already have in your kitchen.  Of course, I love that it’s easy. But I also like that it is versatile and that the cookies look so fun and festive. They are perfect for the holidays! Bring them to a cookie exchange, Christmas party or make them just for something sweet to enjoy.

SIMPLE FESTIVE COOKIES

Most of us are busy all year round, not just during the holidays. But during the last couple of months of the year, it seems like busy-ness kicks up at least another degree or two. Even with well-planned schedules we can get a surprise Christmas party or get together.  These are one of the easiest cookies ever to make, but they look fancy!

What You Will Need to Make Christmas Sprinkle Cookies

This recipe is so easy because most of the ingredients are in the boxed cake mix. You just get to add the fun stuff. It will take a lot longer for the cookies to bake than it will for you to mix up a batch. Here’s what you’ll need:

  • 1 Box of White Cake Mix
  • 1/3 cup canola oil
  • 2 eggs
  • Christmas sprinkles (Both nonpareils the round ones and jimmies or long ones)

This recipe is so easy to adapt to any occasion, theme, or holiday. You can use a chocolate cake mix instead of white if you prefer. You can also use yellow cake mix. If you want to stick with the Christmas theme, try crushing candy canes and using them instead of sprinkles. Feel free to experiment to find your own unique favorite cake mix cookies. Here are a few different ideas of things you can try.

How to Make Christmas Sprinkle Cookies

  1. In a large mixing bowl, mix the cake mix, canola oil, and eggs. Expect the batter to be thick.
  2. Once it’s mixed well, roll the dough into 1-inch balls.
  3. Roll half of the dough balls in circle sprinkles and the other half in the jimmies.
  4. Place the cookie dough balls on a parchment-covered baking sheet.
  5. Bake at 375 degrees for 8-10 minutes or until they are done.
  6. Let cool for two to three minutes, then move the cookies to a wire rack to allow them to finish cooling.

Do I need to add the ingredients listed on the box of cake mix?

No. You do not prepare the cake mix according to the directions on the box. You just empty the cake mix directly from the box into the mixing bowl. Ignore anything the box says you’ll to make the cake and just add the ingredients listed here.

Can you store the dough for later?

You can store the cookie batter in an airtight container in the fridge for up to two days before using it. If you want to save it and finish making the cookies later, wait until just before you bake the cookies to add the sprinkles.

Tips for Making Perfect Christmas Sprinkle Cookies

  • Cookies can be made larger or smaller if desired. Just remember to adjust your cooking time accordingly.
  • Using a cookie scoop or a measuring spoon to make all the cookies will ensure they all come out about the same size. This will help them cook evenly. You don’t want some to burn while others are still doughy.
  • Cookies store in an airtight container for up to five days.
  • Once baked and cooled, the cookies can be frozen for up to two months. Store them in a zipper freezer bag or an airtight container. Thaw at room temperature before eating.

  • 1 box white cake mix ( you do not need ingredients on back of box )
  • 1/3 cup canola oil
  • 2 eggs
  • Christmas sprinkles (both nonparelis and jimmies)

Instructions

  • Mix together cake mix, canola oil and eggs. Batter will be thick.
  • Roll into 1 inch balls.
  • Carefully roll balls into sprinkles.
  • Place on parchment covered baking sheet.
  • Bake at 375 degrees for 8-10 minutes or until done.
