Oven Roasted Zucchini and Squash
One of my family’s least favorite things is veggies. My kids could eat a bowl of fruit at every meal but veggies are a different story. We have learned that it’s all in the ways it’s prepared in order to get my kids to try something new. One way we love to get our kids to eat and try some veggies is by roasting them in the oven. It’s such a simple way to prepare a side dish that brings out all the flavors while adding just a little crunch.
Best Way to Cook Zucchini and Squash
As I mentioned, this recipe is simple to prepare and just as simple to clean up. Everything is mixed together in one large bowl and then roasted to perfection on a large baking sheet.
- Begin by Preheating your oven to 400 degrees F.
- Slice the zucchini and yellow squash into 1/4 inch rounds.
- Add the sliced squash and zucchini to a large bowl, and add olive oil, garlic powder, salt and pepper. Stir to coat.
- Spread the oiled squash and zucchini on the prepared pan. Do your best to make sure the squash are in a single layer.
- Sprinkle the pan evenly with shredded cheese.
- Roast at 400 for 9-10 minutes until tender.
- Turn on your broiler and move the pan up to the very top rack. Broil on high for 2-3 minutes. Don’t walk away! Check it until it is as brown and crispy as you like it. Serve immediately.

- 2 tsp. garlic powder
- 1/2 tsp ground black pepper

- 1/4 cup freshly grated parmesan cheese you can also use finely shredded parmesan cheese
- 2 TBSP olive oil

What are you supposed to do to PREPARE the pan? Your recipe says to spread evenly on PREPARED PAN. No instructions on preparation…. parchment paper, oil, WHAT?

This was a quick side dish to make but needed more flavor for our tastebuds. I will probably make again but will add other spices to it and make a dipping sauce since it’s kind of bland otherwise.

A dipping sauce sounds great! This is the best part of this recipe you can add or take away any spice you want or don’t like! Sometimes we add a touch of italian seasoning or oregano to spice it up a bit.

A little confused… The ingredient list says grated parm & the directions say shredded. These are very different types and would bake differently. Which is used here? It also says garlic powder in the ingredient list but in the directions the garlic is never mentioned. It does mention salt which is NOT listed in the ingredients list. Is it garlic powder? Table salt? Garlic salt? How much salt? Garlic powder & Table salt? Really wanted to make this.

Hi There, We usually use freshly grated parmesan cheese but honestly you can do grated or shredded for this recipe they both melt down perfectly fine. I updated the directions to make sure it said garlic powder and not salt. The best part about this dish is you can add as much spice or as little to your preference.

Hi! Thanks for the recipe. Just a bit of clarification needed: the ingredient list says 2 tsp garlic powder, but the directions say to add the salt and no mention of the garlic powder. Which is it – – garlic powder or salt?
