Delicious Baked Mac & Cheese Cups

Kids can be SO picky sometimes! Their taste preferences are constantly changing, making it difficult for parents to cook for them. One thing I have found is that kids almost always love the delicious taste of mac & cheese, but it can be a little boring sometimes. Why not try this unique way of making macaroni and cheese into easy-to-eat cups! These Baked Mac & Cheese Cups make a great snack or the perfect children’s meal any time of year.  

Easy Mac & Cheese Cups 

The Baked Mac & Cheese Cups are super easy to make. They do require a little prep by cooking the pasta first, but after that, they are easy peasy. The Macaroni and Cheese cups are fun for a birthday party, holiday celebration, snack, or everyday meal. They can be made year-round and are always a hit with both kids of all ages and adults.

Ingredients for Mac & Cheese Cups

  • 2 cups elbow macaroni
  • 2 TBSP Flour
  • 1 cup whole milk
  • 1 Large Egg, beaten
  • 2 cups Freshly shredded sharp cheddar cheese
  • ¼ cup freshly shredded parmesan cheese
  • 2 Tbsp Butter
  • ½ cup seasoned dry bread crumbs
  • 2 teaspoons melted butter

How to Make Mac & Cheese Cups 

  1. Preheat the oven to 350 degrees. Grease your muffin tins with nonstick cooking spray. Bring a large pot of water to a boil. Add the macaroni to the boiling water and cook for 8 minutes until al dente. Drain and return to the pan
  2. While the pasta cooks, prepare the sauce. Melt butter in a large saucepan over medium heat. Add flour. Cook, whisking constantly, until lightly brown, about 1 minute.
  3. Slowly add the cup of milk in a slow and steady stream. Bring to a boil. Cook the mixture until thick, about two minutes. Reduce heat to low.
  4. Add cheese, one handful at a time, stirring gently. Allow cheese to melt between each addition. Remove from heat.
  5. Add drained macaroni noodles. Stir to combine. Add egg and stir until combined. Spoon mac and cheese into prepared muffin cups. In a small bowl combine the bread crumbs and butter. Sprinkle crumb topping on the top of muffin cups
  6. Bake for 30 minutes in the preheated oven or until it is golden brown. Remove from oven and let cool for 5 minutes. 

I store the extras in Tupperware containers and reheat for a few seconds as leftovers. This makes for easy lunches and snacks the next day or throughout the week. Serve with a vegetable or your kid’s favorite fruit and you’re all set with some fun meal prep and comfort food!
