Gingerbread Whoopie Pies

These gingerbread whoopie pies come together really quickly when using a pre-made cookie mix and some delicious cream cheese frosting!

The holidays seem to be the time that cookies, cakes, pies and other confections make their grand appearance.  While I love dessert any time of the year I do tend to indulge more during the holidays 🙂  I mean who doesn’t….we would have healthy eating and New Years resolutions for diets if we didn’t right?!  While I love a good homemade cookie and that is usually the way I bake these gingerbread whoopie pies use a gingerbread cookie mix but they still taste delicious! 

The holidays can be such a busy time of the year that sometimes a little semi-homemade dessert is just what we need to still make something delicious but save some time 🙂  While I used a cookie cake mix for the base of these whoopie pies we went all out for the homemade cream cheese frosting.  Just whip some ingredients together and sandwich the delicious cream between two cookies and sprinkle it with some pretty confectioners sugar and no one will be the wiser 🙂 

Cream Cheese Filling Recipe:

  • 6 tablespoons  butter, softened ( not melted) 
  • 1 1/2 cups Powdered sugar
  • 6 oz. cream cheese, softened
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Whip together butter and powdered sugar until light and fluffy.  Add your cream cheese and beat again until mixed well. Beat in vanilla and pinch of salt.
