These Back to School Brownie Pops are a fun treat for the kids to enjoy after a long day of school.
Now that the kids are officially back in school I thought it would be fun to make a special Back to School Brownie Pop that is perfect as an extra treat in their lunch box or an afternoon school snack. We all deserve a little something sweet here and there right? My boys love brownies and I was excited to try out Pillsbury Mocha Fudge Brownies. Now, I’m not usually a big coffee lover but these brownies were so good. The mocha flavor isn’t overpowering but is definitely still there. My kids gobbled them up and my coffee loving husband really enjoyed them.
These brownie pops are so simple to make and you only need a few ingredients:
- 1 box Mocha Fudge Brownies
- 1 bag yellow chocolate melts
- Black cake decorating gel
- Baking lollipop sticks
I prepared the box mix brownies according to the box. After I let them cool completely I sliced them into rectangular shapes and put a lollipop stick in the bottom.
I melted some yellow chocolate wafers and then dipped the top half of the brownies in the yellow melted chocolate. I added some fun yellow sprinkles for a little extra texture.
Pop the brownies in the refrigerator until the yellow chocolate hardens, about 5 minutes. I then added some letters and numbers with my cake decorating gels. Easy Peasy. The kids loved being able to eat their brownie like a pop.
