These Rolo Pretzel Bites are such an easy and delicious treat with few ingredients and a pop of colorful sprinkles!
ROLO PRETZEL BITES
Salty pretzels and sweet chocolate covered caramel…need I say more? These Rolo Pretzel Bites are one of those treats that some of us grew up on. While they are typically more popular around the holidays they are simple and delicious any time of the year all we did was swap the classic Christmas sprinkles for rainbow sprinkles.
This recipe makes 25 Rolo bites but you can easily double the recipe. There is enough for a small party or gather up in little treat bags for friends and neighbors.
INGREDIENTS NEEDED:
- 50 square pretzels (not the butter flavored) you can also swap for regular pretzels, the shapes will just be different
- 25 Rolo’s
- 8 ounces white chocolate (I like to use candy melts)
- ¼ cup rainbow sprinkles (nonpareils kind)
HOW TO MAKE ROLO PRETZEL BITES
- Preheat the oven to 250°F. Place 25 of the square pretzels on a baking sheet lined with parchment or foil. Place one Rolo candy on top of each pretzel.
- Place the baking sheet in the preheated oven and bake for 3 minutes, until the Rolo’s have softened, but not melted. Remove from the oven and place a square pretzel on top of each Rolo to form a sandwich. Let cool completely.
- Add the white chocolate to a microwave safe bowl. Heat for 1 minute at 50% power, then stir. Continue to heat at 30 second intervals, stirring in between, until melted. Or follow the directions on your packaging for candy melts.
- Dip one half of each pretzel sandwich into the melted chocolate. Allow the excess chocolate to run off, then return to the baking sheet. Sprinkle with rainbow sprinkles while the chocolate is still warm. Allow to cool completely before serving.
