These Turkey Taco Lettuce Wraps are a delicious and low carb meal to start your year off right!

It’s almost New Years and with New Years comes the desire for a healthier lifestyle right? 🙂 Please tell me i’m not the only one that needs a restart after all the holiday festivities filled with good food, desserts, and cookies?! One of my favorite ways to add a healthy high protein into my families diet is with turkey. One of my favorite quick-fix meals is our Orange and Thyme Turkey Cutlets. These turkey taco lettuce wraps are just as quick and tastes equally delicious. I used my favorite Shady Brook Farms ground turkey for the taco meat in this dish.
I actually had the opportunity to tour one of the 700 Independent Farmers family farms that raise Shady Brook Farm turkey at the end of the summer. Myself and four other bloggers headed to the Riverhill farm in Virginia to meet Glenn Rhodes and his family. It was a beautiful day and the scenery was gorgeous!Glenn and his family are so passionate about the way they raise their turkeys. It’s been a family business for many years. We had the chance to chat a about the importance of not using growth promoting antibiotics in their turkeys, the proper ways to ensure quality of life for the turkeys, and in the end, a quality product for the consumers.
We even had the chance to go into the building to see the thousands of turkeys thriving. Isn’t this little turkey the cutest?:)
Glen lives on a beautiful farm and was so humble. He even made us some of his famous kettle popcorn over a fresh fire.
It was so fun to see how giddy him and his wife were over their accomplishments. A photograph of their farm is even on some of the Shady Brook Farms whole turkey packaging! It was such an awesome experience to see just where some of our food comes from and the people behind it.
Along with the Shady Brook Turkey, I used a few classic taco meat ingredients and also added a few of our favorites. We like to add corn, tomatoes and salsa right to our ground taco meat but you could also add black olives too.
Once my meat mixture is combined. I broke away two romaine lettuce leafs per “wrap” to help hold the mixture. I simply placed some of my taco meat mixture in the lettuce leaf and topped it with some of our favorite toppings. We like to add a bit more salsa and sourcream. We also like to drizzle Ranch Salad dressing on top. Yum!
- 1 lb ground turkey, we love Shady Brook Farms
- 1 cup salsa
- 1 cup diced tomatoes, I use fresh tomatoes
- 1 packet Taco Seasoning, or a homemade version
- 1 cup frozen corn
- Romaine Lettuce Leafs
- Water, if needed
- Begin by browning your turkey meat.
- Add salsa to browned turkey meat and allow to simmer for 1-2 minutes.
- Add tomatoes and allow to simmer for 1-2 minutes.
- Add Taco seasoning and stir until completely incorporated. You may need to add a bit of water.
- Lastly add your frozen corn, until heated through.
- Wash and dry 2 romaine lettuce leafs per serving. Stack the lettuce leaf on top of each other.
- Top with turkey taco meat.
- Add your favorite toppings and serving immediately.
My husband is typically a ” if it tastes good already, let’s not mess with it” type of a man but he really enjoyed the turkey in this recipe.
