Apple Fritters

Apple Fritters: delicious bites of light and puffy cake batter that has been filled with diced apples.  It's the perfect fall treat that is coated in a cinnamon sugar mix or dipped in a classic icing.

Ingredients

  • 1 1/2 cups all purpose flour
  • 2 Tbsp. sugar
  • 1 tsp. cinnamon
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 cup milk
  • 2 eggs
  • 1 Tbsp canola oil
  • 1 tsp vanilla
  • 3 cups peeled, cored and diced apples

Cinnamon Sugar Mixture

  • 1 cup sugar
  • 1-2 Tbsp cinnamon, depending on desire

GLAZE

  • 1 cup powdered sugar
  • 2 Tbsp milk
  • 1/4 tsp vanilla extract

Instructions

  • Heat the oil about 2 inches deep in an electric skillet to 375 degrees F.
  • In a large bowl, stir together the flour, sugar, baking powder, cinnamon and salt. Pour in the milk, eggs, vanilla extract and oil and stir until well blended. Mix in apples until they are evenly distributed.
  • Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size.  ( I like to use a small to medium size cookie scoop) for easy dropping. Fry in smaller batches so they are not crowded.
  • Remove from the hot oil using a slotted spoon and drain briefly on paper towels. Toss with cinnamon sugar mixture or in powdered sugar glaze while still warm. Let glaze harden before serving.
