Homemade Pretzel Dogs

Ingredients

  • 1 package fast rise active yeast
  • 1 1/2 cup warm milk or water
  • 2 tablespoons honey
  • 3 3/4 cups all purpose flour
  • 1 teaspoon kosher salt
  • 1/4 cup baking soda
  • 1 large egg
  • coarse salt (or pretzel salt)
  • 8 hot dogs

Instructions

  • Preheat oven to 450°F.
  • Pour warm milk and honey into the bowl of a stand mixer. Sprinkle yeast over top and stir. Allow yeast to sit for 5-10 minutes. It should bubble up.
  • Fill an 8 quart pot with water and bring to a boil over medium high heat. In a small bowl, beat egg with 2 tablespoons water. Set aside.
  • Add flour and salt to yeast mixture. Knead for 3 to 4 minutes until the dough comes together in one ball. Add more flour a tablespoon or two at a time as needed. The dough should be tacky when you pull it out of the mixer but not sticky.
  • Place dough on counter and form into a ball.
  • Cut into equal pieces. (You should be able to get 10-12 pieces to wrap around your hot dogs. The amount of regular pretzels and pretzel bites will depend on how large your make them.) Roll each piece into a 10 inch to 12 inch strand and wrap around the hot dog. Be sure to pinch the ends so the dough stays together.
  • Carefully, add baking soda to boiling water. The water will bubbly up so use caution when doing this step. Place dough wrapped hot dogs,pretzel bites or regular pretzels into boiling water about 3 at a time. Remove with a slotted spoon after 30 seconds. Place on parchment paper or silpat to cool and repeat until all hot dogs and pretzel pieces have been boiled.
  • Brush egg wash onto each pretzel dog or each pretzel sprinkle with coarse salt. I like to use sea salt.
  • Bake for 10-15 minutes until the tops are browned.
