Chicken Parmesan One Pot Pasta

This Chicken Parmesan One Pot Pasta is a delicious and simple meal the whole family will love. Pair with a garden salad, and bread for a quick weeknight dinner.

Ingredients

  • 2 chicken breasts, diced into bite sized pieces
  • 1 tsp italian seasoning
  • 1/2 tsp basil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 24 ounce jar marinara sauce
  • 2-3 cups water
  • 16 ounces short cut pasta, I like Rigatoni
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, shredded
  • 1/3 cup seasoned Panko breadcrumbs
  • basil & parsley, for a garnish

Instructions

  • Add a touch of olive oil in the Dutch oven, then add the chicken, basil, garlic powder, and onion powder. Cook until the chicken is almost done.
  • Add the entire jar of marinara sauce and two cups of water.
  • Bring to a boil and add pasta.
  • Cover and simmer until the pasta is soft about 10 to 15 minutes. Stir occasionally and add small amounts of water if needed. 
  • Stir in ½ cup of the mozzarella cheese and ¼ cup of the parmesan cheese until they are melted.
  • Top with the remaining cheeses. Sprinkle Panko breadcrumbs on the top.
  • Place under the broiler in the oven and cook for three to five minutes or until the cheese is melted and the breadcrumbs are golden brown. Serve Immediately.
