Creamy Cucumber Tomato Salad

Ingredients

  • 2-3 English cucumbers, sliced into coin shapes
  • 1 cup cherry or grape tomatoes, halved
  • 1/4 red onion, sliced thinly
  • 1/4 cup mayo
  • 1 tbsp white distilled vinegar
  • 1 tsp sugar
  • 1 tbsp fresh dill, finely chopped
  • 1/2 tsp minced garlic

Instructions

  • Place diced cucumbers, tomatoes and red onion in a medium sized serving bowl.
  • In a small bowl, whisk together sauce ingredients until mixed thoroughly.
  • Pour over cucumbers and tomatoes.
  • Serve immediately or refrigerate up to 30 minutes before serving.
