Italian Sausage Squash Bake

Ingredients

  • 1 lb Italian sausage cut into 1 in. chunks
  • 1 squash diced into 1/4 in. thick pieces.
  • 1 zucchini diced into 1/4 in. thick pieces
  • 1 Tbsp. coconut oil
  • 2 14.5 oz. cans petite diced tomatoes
  • 1-2 tsp. Mama Mia Marinara Sauce Mix or 1-2 tsp. Italian Seasoning
  • 1/2 Tbsp. dried basil
  • 1/4 cup chicken broth optional
  • 3 Tbsp. parmesan cheese
  • 1/2 cup mozzarella cheese

Instructions

  • Add coconut oil and Italian sausage to a skillet and brown sausage. While the sausage is continuing to cook add diced squash and zucchini. Continue to cook for 2-4 minutes or until zucchini and squash begin to tenderize. Add canned diced tomatoes and spices and allow to simmer for 10-15 minutes, add chicken broth if mixture becomes too thick. Sprinkle parmesan and mozzarella cheese on top and continue to cook until cheese is melted. Serve hot and enjoy!
