- 1 1/2 cups all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3 TBSP. sugar
- Lemon zest of 2 lemons
- 1/3 cup coconut oil melted
- 2 large eggs
- 1 TBSP coconut extract
- 1/3 cup fresh lemon juice
- 1 1/4 cup milk
- 3 tsp. poppy seeds
In a medium bowl mix together flour, baking powder, baking soda and salt. Set aside.
In a small bowl mix together sugar and lemon zest. Add to flour mixture.
In a separate bowl whisk together coconut oil, eggs, lemon juice and milk. Combine with dry ingredients.
Stir in poppy seeds. You can add a touch more milk if batter is too thick.
Pour into preheated waffle iron.
