- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 cup crisco shortening
- 1 cup sugar
- 1 cup pumpkin
- 1 egg
- 1 tsp vanilla
FILLING
- 1/2 cup shortening
- 1 1/2 cups powdered sugar
- 1/2 Tbsp. vanilla extract
- 1 Tbsp. milk
- 1 pasteurized egg whites
- 2 Tbsp all purpose flour
Cream together shortening, sugar and pumpkin together.
Add egg and vanilla and mix again.
Add flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt and mix until fully combined.
Scoop onto baking sheets and bake for 15 minutes at 350 degrees. Allow to cool completely.
