Raspberry Streusel Coffee Cake

This Raspberry Streusel Coffee Cake is a delicious breakfast treat!  A yummy batter swirled with raspberry jam and topped with a crunchy oat and sugar topping.

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg, beaten
  • 1/2 cup milk
  • 1/4 cup oil
  • 1 jar raspberry jam

Topping:

  • 1/2 cup brown sugar
  • 1 TBSP flour
  • 1 TBSP butter
  • 1/4 cup quick oats

Instructions

  • Preheat oven to 375 degrees. Mix together dry ingredients and set aside. 
  • Mix egg, milk and oil and then add to dry ingredients. Pour into a 9x9 inch pan. 
  • Place 2 lines of jam, lengthwise of pan on top of batter and lightly swirl with butter knife. Sprinkle topping over all and bake until done, approximately 20 to 25 minutes.
