Easy Basic Pancake Recipes

Ingredients

  • 1 cup flour
  • 2 tbsp. sugar
  • 2 tbsp. baking powder
  • 1/8 tsp. nutmeg optional
  • 1/8 tsp. cinnamon optional
  • 1/2 tsp. salt
  • 1/2 cup almond milk
  • 1/2 cup milk
  • 2 tablespoons melted coconut oil
  • 1 large egg
  • 1 tablespoon butter or vegetable oil

Instructions

  • In a small bowl, whisk together flour, sugar, baking powder, salt, nutmeg and cinnamon.
  • In another bowl, whisk together almond milk, milk, coconut oil, and egg. Add dry ingredients to milk mixture; whisk until just moistened ( a few lumps are okay ad will actually help make the pancakes more fluffy)
  • Spoon 1/4 cup or your desired amount of batter onto a heated skillet. Cook until small bubbles begin to appear about 3-4 minutes.
  • Flip and continue to cook for 2-3 minutes or until desired doneness.
  • Serve with your favorite toppings.
