In a small bowl, whisk together flour, sugar, baking powder, salt, nutmeg and cinnamon.
In another bowl, whisk together almond milk, milk, coconut oil, and egg. Add dry ingredients to milk mixture; whisk until just moistened ( a few lumps are okay ad will actually help make the pancakes more fluffy)
Spoon 1/4 cup or your desired amount of batter onto a heated skillet. Cook until small bubbles begin to appear about 3-4 minutes.
Flip and continue to cook for 2-3 minutes or until desired doneness.
Serve with your favorite toppings.
