Pumpkin Streusel Muffins

INGREDIENTS
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 cup sugar
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp pumpkin pie spice optional
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 15-ounce can pumpkin puree
- 1/2 cup butter melted (1 stick)
- 2 large eggs
- 2 tsp. vanilla extract
- STREUSEL
- 1/4 cup flour
- 1/4 cup brown sugar
- 2 tsp. cinnamon
- 2 TBSP butter cut into cubes
FOR THE PUMPKIN MUFFINS
Combine flour, sugar, cinnamon, ginger, nutmeg, pumpkin pie spice, baking powder, baking soda and salt.
In another bowl, whisk together pumpkin puree, butter, eggs and vanilla.
Mix dry and wet ingredients just until mixed.
Scoop the batter evenly into the muffin tray. Sprinkle with streusel topping.
Bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean.
