Lemon Glaze Lemon Cookies

Ingredients

FOR THE COOKIES

  • 1/2 cup butter softened
  • 1 cup sugar
  • 1 whole egg
  • 2 TBSP lemon juice
  • 1 tsp lemon zest
  • 2 tsp lemonade drink mix optional
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/8 baking soda
  • 1 1/2 cups flour

GLAZE

  • 1 cup powdered sugar
  • 1 tsp lemon juice more or less depending on your taste

Instructions

FOR THE COOKIES

  • Preheat oven to 350 degrees.
  • In a large bowl, cream together sugar and butter until creamy.
  • Mix in your lemon juice, lemon zest, vanilla extract, lemonade mix and egg.
  • Stir in all dry ingredients until combined.
  • Roll a heaping teaspoon of dough into a ball and place on baking sheet.
  • Bake for 9-11 minutes or until the bottoms are barely brown.
  • Remove from oven and allow to cool on tray for a few minutes before transferring to a cooling rack.

FOR THE GLAZE

  • Whisk together your two ingredients adding more sugar or juice until you get your desired consistency.
