The hubby and I have been on a lifestyle change of sorts by following a program called the 21 Day Fix. It focuses on clean eating with 30 minute exercises daily for 21 days. The portion control of the program has been a little challenging at times so I decided to work with the “allowed” ingredients and came up with some super tasty ice cream that is not only 21 day fix approved but tastes delicious as well! For anyone trying to watch their figure or lose a few pounds—this ice cream recipe is for you! You still feel as though you treated yourself with out all the unnecessary calories and added sugar. This ice cream is made with strawberries, bananas and almond milk. It melts fast so you want to eat it quickly—which won’t be an issue–I promise!
Slice two full bananas and about 8-1o strawberries. Place in freezer and allow to freeze for 1-2 hours.
Puree frozen bananas and strawberries in a mixer. Add 1/4 to 1/2 cup of almond milk in mixer and puree. Serve immediately or you can also place the ice cream in the freezer and stir every 15 minutes until it thickens back up. If you put it in the freezer you will want to pull out the ice cream for a few minutes to thaw before serving.
You know we love Sprinkles in this household–so we added some sprinkles to the ice cream to make it extra special!
