In my family we have some members that love cream based soups and who prefer the broth based soups.  However, I will take soup in any form, especially when it’s being made in the slow cooker.  The slow cooker sausage ditalini soup was actually a recipe requested by my Dad.  He wanted a sausage soup filled with veggies…a few tweaks along the way and we now have a favorite soup that my Dad asks for frequently.

The best part of this slow cooker sausage ditalini soup is that you can customize it to your families preferences really easily.  We tend to use mild sausage but if your family likes hot sausage you can use that.  Our veggies of choice are greens beans, tomatoes, and corn ( I know I know..they aren’t really a veggie) however, you could even add peas, mushrooms, or your other favorite veggies to this soup.

I always brown my sausage in a pan before adding to my slow cooker, it helps sear in the juices and it also helps to make sure the sausage if fully cooker when mixing with the other ingredients.  I find the longer this soup has to cook the more flavorful the flavors are but you could also cook this on high for just a few hours and it will be perfectly fine 🙂  I personally just dump my veggies until the soup has the amount I want. 

Slow Cooker Sausage Ditalini Soup

Ingredients

  • 1 lb mild sausage
  • cherry tomatoes
  • frozen or canned corn
  • frozen green beans
  • 2 cans tomato soup
  • 32 oz. beef broth
  • 1 Tbsp Worcestershire sauce
  • garlic salt
  • onion powder
  • basil
  • 1 lb ditalini pasta, or other small pasta noodles

Instructions

  • Brown your sausage and slice your cherry tomatoes in half.
    Then add everything together in a slow cooker!
  • Add spices to your liking. There is no wrong way to do this!
  • I usually cook this on low for 8 hours, but you could definitely cook it on high for a few hours and it would be done.
  • Prepare your ditalini pasta according the package and your done!
