Busy Morning Breakfast

These sheet pan pancakes are one of my FAVORITE go to breakfast options on busy mornings.  They have the classic pancake taste without the mixing, pouring, and flipping.  Whip together all your ingredients in one large bowl and pour it in a sheet pan.  Bake your large pancake while you finish getting ready in the morning and enjoy a yummy breakfast before you start your day. It’s great for work days, when you on a hurry to get the kids out the door or even a lazy Saturday morning. 

One Pan. Multiple Flavors.

The thing I love the most about this sheet pan pancake is the ability to add multiple different toppings to please all your eaters in the morning. My oldest son loves berries, My middle and youngest love chocolate chips.  Pouring all the batter in one large pan allows you to add toppings to the sections you want.  We typically add two kinds of toppings but you can easily divide your large pancake into 4 large sections. 

Some of our favorite toppings are:

  • Berries- strawberries & blueberries
  • Bananas
  • Nuts
  • Chocolate Chips
  • Apples
  • Cinnamon Sugar

How to make Sheet Pan Pancakes

  1. Pre-heat the oven to 425 degrees.
  2. Add the dry ingredients and whisk together, then add the wet and combine fully.

  3. Line a half-size baking sheet roughly 18 x 13 with parchment paper and pour the pancake batter onto the pan, spreading evenly.
  4. Put the strawberries and blueberries evenly over ½ of the batter and chocolate chips on the other half…and bake for 15 minutes until golden brown.  Cut into squares and serve with syrup.

Ingredients

  • 3 cups all purpose flour
  • 2 TBSP baking powder
  • 2 TBSP sugar
  • 1/2 tsp salt
  • 1 tsp. cinnamon
  • 2 1/2 cups milk
  • 2 eggs
  • 1 TBSP vanilla extract
  • 8 TBSP butter, melted
  • 1/2 cup diced strawberries
  • 1/2 cup blueberries
  • 1/3 -1/2 cup mini chocolate chips

Instructions

  • Pre-heat the oven to 425 degrees.
  • Add the dry ingredients in a medium bowl and whisk together. Add wet ingredients to dry ingredients and mix until combined.
  • Line a half-size baking sheet (mine was an 18 x 13)  with parchment paper and pour the pancake batter onto the pan.
  • Put the strawberries and blueberries evenly over ½ of the batter and chocolate chips on the other half. Bake for 15 minutes or until golden brown.  Cut into squares and serve with syrup.
