Pb&J Banana Waffle Bites: spice up the classic pb&j sandwich with some banana waffles you can make in the blender! It’s a delicious treat the kids will love.
School starts tomorrow for my little kindergartener and he couldn’t be more excited. I asked him what his favorite part would be and he said probably lunch 🙂 classic answer right? Packing his lunch, however, is not my favorite part. My oldest son tends to be picky and at times I think finding enough variety of foods for him during the school year will be a bit more difficult. One thing I do notice with my children is the more fun you make the food the better! We decided to add our own twist to the Banana Waffles we found in the Vitamix Cookbook. I made these banana waffles in my S55 Vitamix Blender and they turned out delicious. They didn’t have an overpowering flavor of banana but just enough to spice up the batter. I also added a pinch of cinnamon.
We added a small amount of our favorite peanut butter and jelly and cut the waffle into little bite sized pieces. They are the perfect to go snack, kids lunch sandwich or even an after school snack!
Banana Waffles
Ingredients
- 2 cups white flour you can always use whole wheat
- 1 Tbsp. baking powder
- 1 tsp. salt
- 3 eggs
- 1 1/2 cups milk
- 2-3 ripe bananas
- 3 Tbsp. butter
Instructions
- Combine the flour, baking powder and salt in a medium bowl. Set aside. Place the eggs, milk, bananas and butter into the Vitamix and secure the lid. Select variable 1. Turn the machine on and slowly increase the speed to variable 6. Blend for 20-30 seconds. Stop the machine and add the flour mixture. Secure the lid. Select variable 1 and slowly increase the speed to variable 6, blending for 20-30 seconds. Let the batter sit for 5-10 minutes. Preheat a waffle iron. Pour the batter into the preheated waffle iron and cook under the waffle maker indicates they are ready.
