Mini Pumpkin Donuts

These mini pumpkin donuts are deliciously coated with cinnamon sugar and make the perfect fall treat!
Mini Pumpkin Donuts
This pumpkin treat is one the whole family will love! It comes together in less than 30 minutes, is simple and delicious! All the favorite flavors that fall brings is bursting in these mini pumpkin bites. This recipe only requires six ingredients and a couple of them are pantry spices which makes putting these together a breeze.
HOW TO MAKE MINI PUMPKIN DONUTS
- Mix together all ingredients in a large bowl until well combined. Batter will be thick.
- Place batter in a piping bag and cut the end of the tip off. Squeeze batter into mini muffin tin, filling it half way.
- Bake at 400 degrees for 5-7 minutes. If serving right away frost as desired.
- Frost Mini Donuts as Desired: you can either dust the tops of the mini donuts with powdered sugar or you can dip the tops of the donuts in melted butter and then immediately into the cinnamon and sugar mixture. I recommend frosting the donuts as you need them as the butter can make the donuts soggy after a few hours
I used a mini donut pan but you could also use a bigger donut pan you will just need to adjust your baking time.

Ingredients
- Yellow Cake Mix such as Betty Crocker
- 1 15 oz. can pumpkin puree I use Libby’s
- 1 tsp. vanilla extract
- 1/2 tsp. pumpkin pie spice
- 1/2 tsp. cinnamon
- 2 Tbsp. melted butter optional
- Cinnamon and Sugar Mixture optional
- Powdered Sugar optional

Love the idea of topping with melted butter and dipping in cinnamon sugar! If they are totally cooled do you think the sugar will still absorb in to the donut?
So, the donuts are delicious! But I didn’t have good luck removing the donuts without some butter etc. to help release them. Also I had to cook them a lot longer than 5-7 minutes, closer to 9-11. Otherwise, great idea and great recipe!
Hey do you use the Betty Crockers instructions as well meaning Dino still add eggs, oil and water

I followed the recipe exactly and these did not turn out. After 7 minutes they still looked raw!! Even after increasing the baking time they still weren’t done. They were chewy and tough on the outside and raw on the inside. Waste of time and ingredients ?
I just made these but the powdered sugar melts right off. Any advice so they can stat pretty?
I would wait until right before serving to dust them with powdered sugar. Once they cool the powdered sugar shouldn’t melt.

Can I use this mix in a waffle maker?

I made these today.omg soon oops yummy.had a hard time finding the pans.,finally got them at Joanns , and on sale too!!! Anyway the only thing I changed was the cake mix.,hubby is a diabetic . So I got the Pillsbury sugar free yellow cake mix.,you really can’t tell the difference . So he can indulge a bit..thanks so much for the recipe . ,
Can they be made the night before and still taste good in the morning?
I think that would be okay. I would probably wait to dust them with the confectioners sugar until just before eating. You can always pop them in the microwave for a few seconds to get them warm again too 🙂

Would you still bake at 400 if using a regular size donut pan ?
That would probably be fine 🙂 I would just keep an eye on them…if you are worried you could always drop your heat down to about 350 and just cook until finished 🙂

There’s milk in the cake mix, these are not vegan.
You can use a Betty Crocker Gluten free mix or another gluten free mix that does not use dairy…then it would be vegan. 🙂
