CLASSIC CHICKEN SALAD
While my kids still tend to prefer the classic ham and cheese, turkey and cheese, and PB&J’s for their sandwiches this chicken salad recipe is one of my husbands favorite lunches. This chicken salad is simple to make, tastes delicious, and is great to prepare in the beginning of the week for multiple lunches during the week.
Add your Favorite Add-Ins:
Chicken salad is delicious with just the mayo, chicken, and a touch of celery but we always like to add a few favorite ingredients to our chicken salad. Most of the time we add some purple grapes and walnuts to our chicken salad but we also love swapping the grapes for chopped apples!
Here are some options you can try:
- sliced grapes
- water chestnuts
- green onions
- red onion
- diced peppers
- cranberries
- chopped apple
- celery, diced
- walnuts or even pecans
How To Make Easy Chicken Salad:
Chicken: you can use canned chicken, rotisserie chicken, or baked chicken. Most of the time I throw a few chicken breasts in the slow cooker with a bit of chicken broth and let it slow cook for a few hours until it shreds easily and then I let it cool before adding my remaining ingredients. Boiled chicken can even work, just don’t over cook it 🙂
MAYO BASED DRESSING: In a large bowl whisk together mayonnaise, mustard, salt and pepper. Add chicken, celery, red onion, grapes and walnuts or the add-ins of your choice. Toss until mixed together and then refrigerate or serve right away.
How can I serve Chicken Salad?
We typically like to eat our chicken salad on two slices of bread but you can also serve it on croissants, bagels, with crackers or on a bed of lettuce for a low carb options.
Easy Chicken Salad Recipe
Ingredients
- 3 cups cooked chicken, shredded
- 3/4 cup mayo
- 1 tsp dijon mustard
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 stalk celery, diced small or to preference
- 1-2 Tbsp red onion, diced small or to preference
- 1/3 cup grapes, cut in half
- 1/4 cup chopped walnuts
Instructions
- In a large bowl whisk together mayonnaise, mustard, salt and pepper.
- Add chicken, celery, red onion, grapes and walnuts. Toss until mixed together.
- Refrigerate until ready to serve on bread.
