Creamy Cucumber Tomato Salad

Need a quick side dish idea that uses some easy to find veggies, whether they be from the grocery store or your summer garden?  This creamy cucumber tomato salad jazzes up some everyday veggies and adds a punch of flavor.  This combination is perfect as a side dish with your favorite grilled chicken, hamburgers or other main protein meals.  This salad comes together in under 20 minutes, making this a great last minute option when your day is full and you need something fast, or just don’t feel like dealing with a hot oven.

Minimal Time. Fresh Ingredients. 

  • Tomatoes– we love to use cherry or grape tomatoes in this recipe as they are less watery but any type of tomato will work great!
  • Cucumbers– use your cucumbers straight from your garden or my personal preference when buying from the store, an english cucumber.
  • Red Onion– I have never been a big fan of big chunks of onions in my food BUT the red onion adds a great added flavorful to the mix whether you decide to bite into one or save them for someone else 😉

Creamy Dill Dressing

The dressing for this dish is what brings all the flavor to your veggies.  By mixing ingredients like mayo, garlic, a splash of vinegar, dill, and a touch of sugar you have a dressing that you can personalize or leave as is.  We like a touch of dill in our salad but you can always add more if you want the taste to be stronger.

  1. Dice cucumbers into coin shapes and slice tomatoes in half. 
  2.  Thinly slice red onion
  3. Add cucumbers, tomatoes and red onion to a large bowl. 
  4. In a small bowl, whisk together dressing ingredients until combined.
  5. Pour dressing over cucumbers and tomato mixture.
  6. Serve immediately or refrigerate for up to 30 minutes before serving.

  • 2-3 English cucumbers, sliced into coin shapes
  • 1 cup cherry or grape tomatoes, halved
  • 1/4 red onion, sliced thinly
  • 1/4 cup mayo
  • 1 tbsp white distilled vinegar
  • 1 tsp sugar
  • 1 tbsp fresh dill, finely chopped
  • 1/2 tsp minced garlic


  • Place diced cucumbers, tomatoes and red onion in a medium sized serving bowl.
  • In a small bowl, whisk together sauce ingredients until mixed thoroughly.
  • Pour over cucumbers and tomatoes.
  • Serve immediately or refrigerate up to 30 minutes before serving.
