Cinnamon Sugar Waffle Bites- the perfect bite of sugary goodness and topped with a delicious strawberry rhubarb jelly.
We tend to be a Saturday breakfast type of family. During the week both my husband and I are up and out of the house around 6:30 a.m. so having a sit down family breakfast on the weekdays just doesn’t happen. Most weekends my husband is the one making breakfast, but I do love to make a good waffle like my delicious lemon coconut poppyseed waffles– so yummy! My husband likes to makes fun of my sugary breakfast addictions. I would much rather a bowl of cinnamon toast crunch cereal then a spinach omelet 🙂 Don’t get me wrong, those spinach omelets are delicious and would definitely start my day off with a bit more energy but sometimes I just can’t help my sweet tooth!
These cinnamon sugar waffle bites are soft, fluffy and so delicious! I used Tastefully Simples Cinnamon Muffin Melt Mix™ and rather than making them into muffins, which would have been delicious as well, I made them into bite sized waffle bites that are the perfect breakfast food for adults and kids. My little two boys just loved these! I added the fun flavor of Tastefully Simple’s Rhubarb Strawberry Fruit Spread. I put some of the fruit spread in a small bowl and microwaved it for a few seconds to warm it up.
Cinnamon Sugar Waffle Bites
- 1 box of Cinnamon Muffin Melt Mix
- 1/4 cup butter melted
- Mix together cinnamon muffin melt mix according to the package. Drop by 1/3 cup full into the center of a waffle maker. Cook until waffle is fully cooked. Brush melted butter over warm waffle bites and roll in cinnamon sugar mixture. Top with fruit spread or eat plain
My boys didn’t even want to wait for the fruit spread. You really don’t even need it but it adds such a fun fruity pop of flavor!
