Chocolate Chip Muffins

These Chocolate Chip muffins are soft, chocolatey and delicious! They are perfect as a breakfast muffin served with a glass of milk and some scrambled eggs.   

CHOCOLATE CHIP MUFFINS

These chocolate muffins are one of my family’s favorite muffins as of late.  The batter is soft and the mini chocolate chips makes for the perfect amount of chocolate in each muffin.  To make these muffins a bit fancy and more like a bakery muffin we added just a tad of nutmeg.  The nutmeg really adds a fun pop of flavor that blends perfectly with the chocolate chips.  If you aren’t a fan of nutmeg just leave it out and these will be just as good.

SOFT AND CHOCOLATEY

The batter is really simple to put together and yields a really soft and light textured muffin.  This batter will not make a heavy muffin like you may get at the grocery store…and while I love a heavier muffin at times these don’t “fill” you quite as much, which makes them a perfect muffin to go along with a glass of milk and some scrambled eggs.  On the downside, it does make you want to eat more than one 🙂 

TIPS FOR CHOCOLATE CHIP MUFFINS:

  • Buttermilk Hack– In this recipe we add a touch of vinegar to our milk before adding to the batter. This allows the muffin to be a bit airy.  You can achieve the same affect with buttermilk itself but I don’t always have buttermilk on hand and this is a handy trick when you need it quickly. Just let the vinegar sit in the milk for about 5 minutes before proceeding. 
  • A touch of nutmeg– we love adding nutmeg to some of our sweet treats. It adds a pop of flavor with the chocolate but doesn’t over power the taste.  If you don’t like nutmeg just leave it out completely and these will still be just as yummy. 
  • Mini Chocolate chips – while you can certain use regular size chocolate chips I prefer the miniature ones. It helps keep the muffin airy and doesn’t weight the batter down. 
  • Coarse Sugar – also known as sanding sugar helps give these muffins more of a bakery feel.  You can also swap the sanding sugar with coconut sugar.

Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 1/2 Tbsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/3 cup oil
  • 1 egg
  • 1 cup milk mixed with 1 Tbsp. vinegar
  • 1 Tbps vanilla extract
  • 1 cup mini semi sweet chocolate chips

Instructions

  • Preheat oven to 375 degrees F.
    Line a standard-size muffin tin with paper liners or spray with non-stick cooking spray.
  • In a small bowl, add the milk and tablespoon of vinegar and set aside for 5 minutes.
    In a medium bowl, whisk together the flour, ½ cup of the sugar, baking powder, nutmeg, cinnamon and salt; set aside.
    In a large bowl, whisk together the oil and the egg.
    Add the milk and vanilla extract and whisk to combine.
  • Add flour to wet ingredients and mix until combined being careful not to overmix. A few lumps are okay.
    Fold in chocolate chips.
  • Divide the batter evenly between the muffin cups and sprinkle the tops with sugar.
    Bake until golden brown and a thin knife inserted into the center comes out clean, 15 to 20 minutes.

  1. I’ve made these about a week ago. They were good but i might have over baked them a wee bit. My tops were everywhere tho not very smooth
