Easter Rice Krispie Treats

Peeps. You either love them or you hate.  Those that love them either like them fresh or they like them stale 🙂   If you like these sugary covered marshmallows bunnies then you have got to try these Easter Rice Krispie treats.  They are so fun for the kids and would be great to serve at an Easter Egg hunt!  We decided to use different colored peeps because my boys couldn’t decide what color they liked best but you can easily just use one color.

Tips for making a Sweet Marshmallow Treat with an Easter Twist

We made a classic rice krispie treat recipe that is ooey and gooey (just the way a rice krispie treat should be) and as soon as we put the hot marshmallow cereal in our baking dish we topped them with spring colored sprinkles and our bunny peeps.

  • Add the marshmallow bunnies as soon as you add the hot cereal mixture to your pan.  Adding them while the cereal is still hot helps slightly melt the peeps to the rice krispies.
  • My favorite way to make rice krispies treats is in the microwave.
  • Use quality marshmallows.  I prefer Jet Puffed marshmallows. I do feel like they are fresher and last longer.

Servings 8 servings

Ingredients

  • 3/4 cup butter
  • 11 cups mini marshmallows about two 10 ounce bags
  • 1 tsp vanilla
  • 9 cups crispy rice cereal

Instructions

  • In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth.
  • Add Rice Krispie cereal. Stir until fully coated.
  • Using buttered spatula or wooden spoon evenly press coated Rice Krispie cereal into a 13 x 9 inch pan coated with cooking spray. Top with sprinkles and peeps while still warm. I placed the peeps a few inches away from each other, or about the size pieces I wanted to serve.
  • Let cool and serve.
