I have had so much fun getting to develop some recipes like the Vanilla Chai Snickerdoodle Cookie and the Raspberry Whipped Topping Dip. This month I tried something savory and put together some Bayou Bourbon Shredded Chicken which is perfect for the big game day coming up!
This Bayou Bourbon shredded chicken is just bursting with flavor and is so moist and delicious! The whole wheat ciabatta roll is the perfection companion for a hearty meal. I paired this sandwich with a quick tossed salad and dinner was served in no time! I love using my crockpot for days that are busy with appointments and errands. Coming home to dinner being just about done and the house smelling delicious is one of my greatest pleasures. J The ingredients for this dinner is simple and it all starts with Tastefully Simples delicious Bayou Bourbon Glazez™. Pineapple juice and pineapple cubes really takes this dish to the next level and adds a fun Hawaiian flavor!
Bayou Bourbon Shredded Chicken
- 1 pound pork loin
- 3/4 cup Bayou Bourbon Glaze
- 1/2 cup pineapple chunks
- 1/4 cup pineapple juice
- 1/2 cup beef broth
- Combine all ingredients in crockpot. Cook on low for 6 hours or high for 4 hours. Remove pork loin from crockpot. Use two forks to shred pork and return to crockpot for 1/2 an hour. Serve on ciabatta role, salad or pizza.
Since only my husband and I currently eat most of the meat meals that I make –why are kids so picky J – this recipe had lots of leftovers. This shredded chicken would taste great on top of a tossed salad for lunch the next day or even on top of a pizza with some more pineapple cubes!
