We have fresh baked banana bread at least one a month, sometimes every other week, depending on how many over-ripe bananas we have lying around. When we aren’t making banana bread we do enjoy our best homemade banana cake recipe. This banana bread recipe is delicious, simple, and flavorful.
Secret Ingredient for Moist & Delicious Bread
My favorite way to keep banana bread deliciously moist is yogurt! I prefer to use vanilla yogurt as it adds a depth of flavor to the banana bread that is just so yummy! However; plain yogurt and even greek yogurt can be used with the same results. Out of yogurt? Sour cream also works perfectly in this recipe.
Overly Ripe Bananas are a must for a delicious and flavorful banana bread. The more spots the bananas have the sweeter they get.
Don’t have ripe bananas on hand? Use this trick:
Place the bananas, peel on, on a baking sheet and bake at 350 degree F for about 6-8 minutes, or until the banana skin is dark.
How to make Banana Bread
- Mash bananas in a small bowl and set aside.
- In a large bowl, mix together butter and both sugars just until blended. Add eggs and vanilla. Stir in bananas.
- In a separate bowl whisk together flour, cinnamon, baking soda and salt.
- Mix your dry ingredients with your wet ingredients.
- Stir in vanilla yogurt. Pour into a greased loaf pan.
- Bake at 350 degrees for about 1 hour or until a toothpick in the center comes out clean. Towards the end of baking you may need to add a piece of foil on top so the top doesn’t get overly browned.
