30 Minute Taco Soup

One of my favorite fall/winter meals is a bowl of soup! Lately, the weather has been starting to cool down and it immediately gets me into the soup-making mood. This 30-minute taco soup is not only simple but tastes delicious too! It’s packed full of ground beef, beans, and tomatoes! To lighten this taco soup you can also swap the ground beef for ground turkey or venison, which is one of my husband’s favorite during hunting season. 

Ingredients for Easy Taco Soup Recipe

The simple ingredients for taco soup are essentially the same as tacos, except you won’t need the tortillas. Add as little or as much of each to make the soup your own!

  • ground hamburger (or ground turkey)
  • onion
  • taco seasoning mix
  • green pepper
  • canned corn
  • kidney beans
  • black beans
  • pinto beans
  • Rotel tomatoes with chilies
  • diced petite tomatoes
  • tomato sauce
  • salsa
  • beef broth

Feel free to add your favorite taco toppings if I left something out, this is just what we like to put into our large pot. If you’re extra fancy and have homemade taco seasoning, that’s even better!

How to Make 30 Minute Taco Soup

The best part about this taco soup is that it only takes about 30 minutes until it’s on your table and ready for your family! It only requires one pot-which means less mess! The only thing better than a dinner that can be made in less than an hour is a recipe that can be made with very few dishes!

Begin by browning your meat in a medium saucepan. Drain the fat or grease if needed. Toss in the green peppers and onions and saute them until slightly tender. Add in the remaining ingredients and allow them to simmer on medium/low heat for 15 – 20 minutes.

Be sure to add more beef broth as needed because the soup thickens pretty quickly. If this is your first time making taco soup, I recommend keeping an eye on it in case you need to add a cup of water here and there. Water will work just fine if you run out of broth.

Top your finished soup with cheddar cheese and sour cream. We like to serve out with chips or fresh bread!

Can I Make Taco Soup in the Slow Cooker?

Yes! You can absolutely make taco soup in a slow cooker, it will just take longer than 30 minutes. Throw all of the ingredients in the slow cooker and let it cook for the day. I would brown the hamburger first before putting it in the slow cooker. Set in on low for 6 hours and let the flavors blend together perfectly! I promise your house will smell amazing!

How Do I Spice Up Taco Soup?

If you are looking for ways to make your taco soup spicier, try adding chopped-up green chiles or chili powder. Some people like to add hot sauce to the mixture as well!

Can I Use Chicken Instead of Ground Beef?

If you prefer chicken over ground beef, try cooking some chicken instead. Cup up small cubes of chicken and cook them fully in a saucepan or frying pan. Once they are cooked through, add them to your pot with the rest of the ingredients. You may even like using ground chicken for a quick lunch option!

Using Chicken Broth Instead of Beef Broth

I tend to use beef broth because it is saltier, but chicken broth will work just fine. If you end up using chicken instead of beef, chicken broth may taste better as well. Since the canned beans, corn, and tomatoes have extra juice, be sure to drain them before adding them to your soup unless you want it to be extra liquidy. There are low sodium broths available in stores as well.

Other Taco Soup Ingredients You May Enjoy

Enchilada sauce, red bell pepper, lime juice, green chilies, green onions, oregano, cayenne pepper, and any other favorite toppings.

Freezing Your 30 Minute Taco Soup

This recipe is simple to freeze if you have leftovers. Simply pour them into an airtight container that is also freezer safe. When you wish you eat the soup again, just let it thaw on the counter during the day. Warm up a single portion or a full family meal on the stovetop, in the slow cooker, or in the microwave.

  • 1 lb ground hamburger venison or ground turkey
  • 1/2 medium onion diced finely
  • 1 package taco seasoning mix
  • 1 green pepper chopped
  • 1 red pepper chopped
  • 1 15 oz can corn
  • 1 15 oz. can kidney beans drained
  • 1 15 oz. can black beans drained
  • 1 15 oz. can pinto beans drained
  • 1 can Rotel tomatoes with chilies
  • 1 15 oz. can of diced petite tomatoes
  • 1 15 oz. can of tomato sauce
  • 1/2 cup jar salsa
  • 1 cup beef broth

Instructions

  • Brown hamburger in a medium saucepan. Add green peppers and onions and saute until slighty tender. Add in the remaining ingredients and allow to simmer on medium/low heat for about 15-20 minutes.
  • *Add more beef broth as needed- this soup thickens pretty quickly.
  • *Top with cheddar cheese and sour cream. Serve with chips or fresh bread 🙂
